Sweet & Spicy Potato Side Dish

This dish is inspired by a potato side dish that's often served at Korean restaurants. It's not exactly the same and to me, it's not better or worse; it's just different but still delicious.

Ingredients:
1 medium potato, cubed
1 teaspoon hot pepper flakes (gochugaru)
1 teaspoon minced garlic
1 teaspoon soy sauce
2 teaspoons honey
½ teaspoon sesame oil
Start by boiling the potatoes until they're just barely tender. You don't want them to be so soft and delicate that they crumble.

Next, drain the potatoes but leave about 2 to 3 tablespoons of water in the bottom of the pot. Return the pot to the heat (low) and add in all of the seasonings (a.k.a. the rest of the ingredients) and mix carefully until the liquid has all evaporated.
... and that's really all there is to it.
Serve warm or at room temperature. By the way, if you can't handle too much spice you can definitely tune back the amount of hot pepper flakes.
