Funfetti Cupcakes

In addition to the chocolate covered oreos, I made some funfetti cupcakes for the bake sale. I decided to jazz them up by baking a candy bar in the center and then topping them with cream cheese frosting.

Use applesauce in lieu of oil in boxed cake mixes for a lower fat recipe AND a moister cake.

Class of 2013!

Congratulations to my baby sister, who is graduating this weekend. I will be heading up to my old stomping grounds in Ithaca this weekend. How lucky for us to have the same amazing Alma Mater! It makes these obligatory university visits quite pleasant for me, as I have many memories attached to the campus.

What I Ate: Pizza with Arugula

This is a great pizza recipe for brunch. It's got salty prosciutto and asiago cheese, sweet sun-dried tomatoes, soft fresh mozzarella cheese, spicy arugula, and the thing that makes it brunch-y: a fresh cracked egg.

This 'What I Ate' post is going to be a little different, as I decided to make a video, which I haven't done before (on this blog, anyway). I'm hoping to get into the groove of filming more and more, as it's also a fun hobby, in addition to blogging and photography.

Great Googa Mooga 2013

The Great Googa Mooga is a foodie festival that debuted last year. I heard and read a lot of reviews last year that said the event was unorganized and chaotic, that the lines were unbearably long, and worst of all: a few booths ran out of food.

I was at Googa Mooga on Saturday and it was awesome. The weather was less than perfect but the food was delicious and I had a lot of fun.

I didn't take too many photos, since I was busy eating, but here's a list of what I ate:

  • Beef Tongue Pastrami Sandwich from Craftbar
  • Smoked Meat Sandwich with Potato Salad & Sour Pickles from Mile End Delicatessen

  • Cardamom Ice Cream with Cocoa Nibs from Big Gay Ice Cream
  • Sweet & Salty Brownie from Baked
  • Cinnamon Ice Cream Sandwich with Snicker Doodle Cookies from Melt Bakery
My favorite savory item was the truffle burger. It was so delicious. My favorite sweet item was the ice cream sandwich. The snicker doodle cookie was chewy and delicious and the cinnamon ice cream was perfectly sweet and creamy.

My Garden 2013

I had been thinking about and planning what to plant in my garden since February and once spring hit, I was rearing and ready to go but the weather just would not cooperate. We'd have spurts of warmth but then it would get cold again for a few days so I was really hesitant to plant anything. Finally, a couple weekends ago, I felt comfortable enough to start planting.

I went to Home Depot and bought a bunch of awesome vegetables and fruits and herbs and bought a few cheap but useful gardening supplies from Christmas Tree Shops and also popped into Michaels for some supplies to DIY my own garden markers. You can see a photo diary of how I made my garden markers on my travels blog.
So I bought all of these amazing plants from Home Depot. The smaller potted plants (like the peppers) were $3 each and the larger pots (like the herbs) were $3.50 each. I also bought a few flowers to plant in my garden to attract bees and butterflies and other pollinators.

Blueberry Crumb Cake

It's been a few weeks since I've posted a dessert-y sweet recipe so today I'm sharing a recipe for blueberry crumb cake. There was a container of blueberries sitting in my fridge for weeks. WEEKS. Because I'd completely forgotten about them. Thankfully, somehow, they were still edible. A few were a bit dehydrated (think blueberry raisins) but most were still amazing and plump. I don't know if I should be thanking luck or preservatives for that. I didn't want them to go to waste so I decided to bake with them. I could have made lemon blueberry bread but I had a whole pound of berries to use up so I decided to make a crumb cake. The cake portion of this is actually quite similar to the bread recipe - it's just a bit lighter and fluffier.

Ingredients:
Crumb topping
1 cup flour
2 tablespoons brown sugar
2 tablespoons granulated sugar
1 teaspoon cinnamon
¼ cup cold butter (COLD!)

Cake
1 cup flour
1 teaspoon baking powder
¼ teaspoon baking soda
½ teaspoon salt
¼ cup room temperature butter (nice and soft!)
½ cup sugar
1 egg
1 lemon - zest & juice
½ cup sour cream or buttermilk
1 teaspoon vanilla extract
1 lb blueberries (about 5 cups)
Start by making the crumb topping. Combine flour, brown sugar, granulated sugar, and cinnamon in a bowl. I can't even begin to explain how much I love my heart-shaped measuring cups; I mean, would you look at those brown sugar hearts?!

Pão de Queijo

Have you ever been to a Churrascaria? If not, then you must go; and if you have, then you must continue to go. Churrascaria is a Portuguese/Brazilian barbecue restaurant and usually they offer "rodízio" service, which is when they come around to your table with giant skewers filled with different types of meats and offer you pieces. There's usually also a buffet with salads and other side dishes as well.

Most recently, I visited a Churrascaria and rediscovered my love for pão de queijo, which translated literally means "cheese bread." It's a Brazilian cheese bread made with tapioca flour and it's amazing. Tapioca flour makes the bread chewy and stretchy and quite different from a regular dinner roll. I've seen a few recipes that require a lot of kneading and work, but recently I stumbled upon a way to make it in a blender which takes less than 5 minutes from prep to oven.

By the way, the pronunciation of pão de queijo is a little tricky to master. I've listened to a bunch of recordings and had one of my Brazilian friends repeat it to me over and over. The best way I can describe it is to make the "pão" as nasal as possible. The 'p' should be really light, almost like a 'b' sound - think about the way the 'p' sounds in the word "sponge," and the "ão" is like a cross between "ow" and "ong." And then the "de" is more like the French word, "je" and the "queijo" sounds like, "kay-zho." Sorry, I was horrible at describing that. Google it if you'd rather hear it.

Ingredients [makes 12 to 16 mini-muffin sized rolls]:
1 cup tapioca flour (a.k.a. cassava flour)
½ cup milk (room temperature)
½ teaspoon salt
1 clove minced garlic
¼ cup melted butter (cooled to room temperature)
1 egg (room temperature)
¼ cup cheddar cheese
¼ cup asiago cheese
+ cooking spray/butter/oil for greasing the pan
** You can use any great melty cheeses you prefer. Farmer's cheese or queso fresco would be amazing.
Start by grating the cheese. I like nice big pieces because it makes the bread seem gooier but also, it's great for snacking.

Baby farfalle with Italian sausage (both sweet and hot), crushed red pepper flakes, caramelized onions, eggplant, kale, and a few crushed tomatoes.
