Salted Honey Candy

Why don't we have honeycomb candy in the states? Every time I go to the UK, I gorge myself on honeycomb candy because it's so friggin' good. It's fluffy and crunchy and it tastes like honey; it doesn't get much better.

I'm sharing my own version of honeycomb candy today. It's got the fluffy honeycomb top but the candy sort of separates into a chewy honey bottom. It's perfect for snacking and I also love using it to sweeten a cup of tea.
Ingredients:
1 cup sugar
½ cup honey
¼ cup water
1 tablespoon baking soda
¼ teaspoon sea salt

Start by pouring the sugar, honey, and water into a saucepan and heat it over a medium heat and stir just until the ingredients dissolve.
Let the mixture heat up until it reaches 300F.
Meanwhile, get your baking soda, salt, and parchment paper set up for finishing the candy.
Use a thermometer to check the temperature of the candy.
As soon as it's 300F, take the pan off the heat and quickly whisk in the baking soda. The candy will foam up, which gives it that honeycomb texture.
Pour the candy out onto the parchment, sprinkle with salt, and leave it alone to set up.
Once the candy's set up and hard, break it up into little pieces and dig in! It's basically like eating a solid piece of honey.
It's also perfect for sweetening up a cup of tea. I like bringing it to work because it travels well and I can just keep the candy wrapped up in my desk drawer. It's great.
