What I Ate: Spicy Chili with Steak

Lately, I've been loving making chili with diced beef instead of ground beef. I like cooking it to medium, taking it out and setting it aside, cooking the veggies in the fond, and continuing the recipe as usual and only stirring in the beef at the v. last minute before serving. It just feels like a more luxe version of chili and for me, gives it more of a dinner vibe than a lunch vibe.
Though, to be completely honest, the main reason I eat chili is for the toppings. Grated cheese and cilantro are compulsory.
