Blueberry Pancakes

It's easy to make "embellished" pancakes - just alter my buttermilk pancakes recipe and add a few blueberries or strawberries or banana or chocolate chips or almonds or sprinkles (funfetti pancakes!) or chunks of cheese and ham (savory pancakes!), the sky is the limit.

Don't add blueberries (or other confetti) directly to the batter. The best technique is to pour the batter onto the pan and then dot the cake with blueberries.

It's the best when the blueberries explode and leave behind a purplish pink stain. Pretty and festive.
