Garlic Mashed Potatoes
I love mashed potatoes - I like making them hearty with sour cream, cheddar, bacon, and chives mixed in or fancy with crispy pancetta, mascarpone, and shallots. But I also love just plain-Jane garlic mashed.
Tada! Delicious potatoes.
I served them alongside a half rack of ribs.
Ingredients:
2 large Idaho potatoes
1/2 cup milk
2 tablespoons butter
3 cloves garlic
1/2 teaspoon black pepper
1 teaspoon salt
Peel the potatoes, cut into big chunks, put in a pot with cold water, and then bring to a boil. Once the potatoes are tender (you'll know by stabbing it with a knife and if it pokes in easily and pulls out just as easily, it's done), drain and return to the hot pot. Meanwhile, warm the milk, butter, garlic, salt, and pepper in a saucepan until it's warm. Start mashing the potatoes, add the milk mixture, and then stir.I served them alongside a half rack of ribs.
